Our Cultivation

The varieties cultivated are those of the local tradition: Biancolilla, Moresca, Carolea and Tonda Iblea, the union of these varieties create a unique blend linked to the family tradition. The harvest is anticipated in early October, the olives are harvested manually and carefully selected transported in crates and processed within a few hours in a mill not far from the farm, to obtain the maximum organoleptic result.

 

Company

The family has always produced organic extra virgin olive oil and PGI its olive groves boast specimens reaching even four hundred years. The farm "Russa dei Boschi" has belonged to the Polizzi family for four generations, and has always produced a top quality oil, much appreciated by the most demanding consumers and destined to bring Sicilian tradition and authenticity to the world.

Processing

The processing takes place through the milling in mills of the latest generation with cold pressing, this allows to obtain an oil that does not undergo the high temperature keeps intact its beneficial and healthy properties.
